Slimming Eats Low Syn Coconut Chicken Curry Rice – gluten free, dairy free, vegetarian, Slimming World, and Weight Watchers friendly – just 1 syn per serving, 230 calories or 5 smart points

INGREDIENTS
  • 1 cup (240ml) of uncooked long grain rice
  • 1 cup (240ml) of silk true coconut milk (4 syns) – *see note
  • 1 cup (240ml) of chicken or vegetable stock
  • 1 onion, finely chopped
  • 1 red pepper, finely chopped
  • 200g (7oz) of broccoli slaw (or use grated vegetables)
  • 250g (9oz) of chicken thigh (approx 3 small chicken thighs), chopped into small pieces
  • ½ cup (120ml) of frozen peas
  • 2 cloves of garlic, crushed
  • 2 teaspoons of curry powder
  • 1 tablespoon of soy sauce (or tamari or coconut aminos)
  • spray oil
METHOD
  1. Rinse rice under cold water to remove any excess starch.
  2. Place in a saucepan, along with stock, curry powder and coconut milk, gently bring to a boil, then reduce heat, cover and simmer until stock/milk is almost absorbed, turn off heat but leave covered for about 10 mins to allow steam to continue to cook rice.
  3. Spray a frying pan or wok with some spray oil, add the chicken, onion and garlic and fry until lightly golden.
  4. Add the broccoli slaw and red pepper and cook for a further 5-6 mins, until chicken is cooked through.
  5. Add the light soy sauce and frozen peas and then mix in the rice.
  6. Serve and enjoy!! It is great as a side or as a main meal.
